Greetings from South Korea!
You may recall that last year I spent 3 months here helping some friends develop their American-style restaurant. Now I am back for round 2. Well, eventually. I’m actually only here for a few days and will take off shortly for… India! It’s been 5 years since my last visit and I am very excited to return. I’ll be there for about 1 month for a mix of immersion in both meditation and food.
It seems that 2023 is the year that everyone wants to travel. The post-COVID rebound has resulted in packed airports, expensive flights and over-crowded tourist sites. Historically I’ve been excellent when it comes to bouncing back from a long day (sometimes days!!) of travel. I arrive at my destination, go to bed when the locals do and about 11-12 hours of sleep later I’m operating at 95% capacity. I attribute a lot of this to what I eat (and also what I don’t eat!). My top food & nutrition tips are:
Pack your own food. I know that you aren’t surprised by this. It may be easier to grab something at the airport but keep reading for some reasons to take the time to prep your own snacks and meals.
Eat probiotic- rich foods before, during and after. This will do wonders for your digestion as well as immune system. I HIGHLY recommend tucking some instant miso soup into your carry on.
Fiber is your friend… to a point. I learned this the hard way when I flew from Korea to Thailand and thought I was very smart when I had extra psyllium husk in my yogurt that morning. Midway through the flight I wondered how the seat belt had gotten so tight.
Eat mindfully. If there ever was a time to be conscientious of what you eat, this is it. You don’t have to finish the meals that you are given on the airplane or even the food that you brought. I feel better when I feel light.
Drink water and then drink more water. I’m constantly drinking water when I travel. No coffee, alcohol or sugary beverages. Drinking lots of water also ensures that I have to get up to go to the bathroom much more frequently. My favorite bathroom? The one farthest from where I’m seated.
Some ideas on what to bring with you:
A slice or two of a vegetable frittata
An assortment of cut veggies, fruits and cheese
Instant miso soup (TSA will confiscate your yogurt but not this probiotic powerhouse!)
