As we step more fully into summer, I’ve been reflecting on what this season means for our kitchens. If I had to choose one word, it would be EASE. Easy preparations, recipes, and unfussy menus.
But ease doesn’t mean boring. One of the simplest ways to instantly enliven and invigorate food is to garnish it. Now, I’m not talking about a slightly yellowed sprig of curly parsley. I mean something you can sprinkle, drip, or dust onto your food in seconds, dramatically transforming the dish to be more enticing, appealing, and delicious.
In culinary school, I remember an instructor who did some slightly fancy plating, added a sprinkle of garnish, and said, “This is the difference between a $12 plate and a $28 plate.”
We eat with our eyes first. Just like everything else in life, making a good first impression is crucial.

All of these enhancements took about 10 seconds to complete.
There are times that a sprinkle of black pepper as well as a drizzle of fruity olive oil is all I need as a garnish. However, there are other times that I want something with a bit more panache.
